Chestnut Flour Spiced Donuts with Apricot Coconut Cream

Ingredients

Dry
  • 1 cup chestnut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon allspice
Wet
  • ½ cup apple sauce
  • ½ cup honey
  • 2 eggs
Apricot Coconut Cream
  • 1 can full-fat coconut milk, refrigerated overnight
  • ½ cup apricot jam
  • ½ teaspoon vanilla

  1. Sift the dry ingredients in a medium bowl and set aside.
  2. In a small bowl mix the wet ingredients with a fork.
  3. Add the wet to the dry and continue mixing with a fork until well combined.
  4. You'll need about 1-1.5 tablespoons of batter for the donut maker for each donut.
  5. Follow the instructions in the manual for cooking times, but it's generally about 3-5 minutes.
  6. *If baking in the oven with a donut pan, it's about 13 minutes at 350° F, and you'll need closer to 2 tablespoons of batter per donut.
  7. Let cool completely.
Apricot Coconut Cream
  1. Skim the cream off the top of the can of coconut milk and transfer to a medium bowl.
  2. Add the vanilla and beat with a hand/stand mixer until it resembles whipped cream.
  3. Gently fold in the apricot jam, then refrigerate for about 1 hour to let it set.
  4. Top each donut with the cream and serve immediately, or store in the refrigerator for up to 1 day.
Notes
  1. You can make these with a mini donut pan and bake in the oven for about 13 minutes. Make sure you grease the pan well.
