Roasted Rosemary Balsamic Cherry Tomatoes

Ingredients
  • 1-pint cherry tomatoes
  • 1 Tbl olive oil
  • 2 Tbls balsamic vinegar
  • 1 tsp honey
  • 1 garlic clove, crushed or minced
  • 2 rosemary sprigs, coarsely chopped
  • Coarse salt and pepper
Instructions
  1. Preheat oven to 300°F
  2. Combine and toss all ingredients directly on a baking sheet. Spread them out into one layer and roast for 40-45 minutes, until the tomatoes are soft. If you're using larger tomatoes they'll take a bit longer to cook. Use the taste test and cook to your liking ;)
