Serves: 25-30 slices
Ingredients
  • 1 English Cucumber
  • ½ c your favorite yogurt, cream cheese, or goat cheese
  • ¼ lb smoked salmon chopped in small pieces
  • Fresh herbs like chives, dill, or mint
  • Optional: capers and/or olives
Instructions
  1. Wash and slice the cucumber into ¼ inch rounds and top with your choice of yogurt/cheese, then salmon and herbs.
  2. Refrigerate until ready to serve.
  3. Best when eaten the same day.
